Ingredients
  

Vegetables
  • 2 large zucchinis, sliced into rounds
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F. Cut chicken into bite-sized pieces and marinate if desired.
  2. Slice zucchinis into rounds and set aside.
  3. In a large mixing bowl, combine chicken, zucchinis, tomatoes, onion, and olives. Drizzle with olive oil and season with oregano, garlic powder, salt, and pepper. Toss to coat.
  4. Transfer mixture to a greased 9x13 inch baking dish and spread evenly. Sprinkle feta cheese on top.
  5. Bake for 25-30 minutes until chicken is cooked through and vegetables are tender. Optionally broil for 2-3 minutes for a golden top.
  6. Let cool for a few minutes before serving. Garnish with fresh parsley.
