Preheat your oven to 400°F (200°C). Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper. Set aside.
Slice the zucchinis into half-moons, halve the cherry tomatoes, dice the red onion, and slice the Kalamata olives. Mince the garlic.
In a large mixing bowl, combine the chicken, zucchini, tomatoes, onion, olives, and garlic. Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper. Toss to coat.
Transfer the mixture to a greased 9x13-inch baking dish and spread evenly. Bake for 25-30 minutes.
Remove from the oven and sprinkle feta cheese on top. Return to the oven for an additional 5 minutes.
Let cool for a few minutes before serving. Garnish with fresh parsley.
