Method
 

  1. Gather all your ingredients to make the process smoother.
  2. Place the pecans, dates, oats, maple syrup, vanilla, cinnamon, and salt in a food processor. Pulse until well combined and sticky, about 30 seconds to 1 minute.
  3. Roll small portions of the mixture into balls about 1 inch in diameter and place them on a parchment-lined baking sheet.
  4. Chill the balls in the refrigerator for at least 30 minutes to firm up.
