Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, whole wheat flour, protein powder, baking soda, cinnamon, and salt. Mix thoroughly.
  3. In another bowl, mix the brown sugar, melted coconut oil (or butter), egg, and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients and stir gently until just combined.
  5. Fold in the raisins and any additional oats if desired.
  6. Drop rounded balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes until edges are golden brown. Let cool before transferring to a wire rack.
