Ingredients
  

Cheese Tortellini
  • 8 ounces cheese tortellini provides a delightful cheesy bite
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion thinly sliced
  • 1 medium green bell pepper thinly sliced
  • 1 pound thinly sliced beef sirloin or ribeye
  • 2 cloves garlic minced
  • 1 teaspoon Worcestershire sauce adds umami flavor
  • 1 cup beef broth for sauce
  • 1 cup provolone cheese shredded
  • to taste salt and pepper for seasoning
  • to taste fresh parsley for garnish

Method
 

  1. Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add sliced onion and green bell pepper. Sauté for about 5 minutes until softened.
  3. Add thinly sliced beef to the skillet and cook for about 5-7 minutes, stirring occasionally until browned.
  4. Stir in minced garlic and Worcestershire sauce. Cook for an additional minute. Pour in beef broth and bring to a simmer. Cook for about 3-4 minutes.
  5. Add cooked tortellini to the skillet, stirring gently. Cook for another 2-3 minutes until heated through. Sprinkle shredded provolone cheese on top and cover for a few minutes to let the cheese melt.
