Method
 

  1. Gather all ingredients and measure them out.
  2. Combine almond butter, maple syrup, and vanilla extract in a mixing bowl until smooth.
  3. Pulse pistachios in a food processor until coarsely chopped, then add to the mixture along with oats, protein powder, and salt. Mix well.
  4. Press the mixture into a lined 8x8-inch baking dish evenly and compactly.
  5. Bake in a preheated oven at 350°F for 15-20 minutes until edges are golden. Let cool completely before cutting into bars.
