- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the whole wheat flour, protein powder, baking powder, and salt. Whisk to blend well.
- In a separate bowl, mix the melted coconut oil, honey (or maple syrup), milk, egg, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Fold in your favorite mix-ins, then drop rounded tablespoons of dough onto a baking sheet, spaced about 2 inches apart.
- Bake for 12-15 minutes, or until lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
