- Wash and peel the sweet potatoes, then slice them into 1/2-inch rounds.
- In a large bowl, drizzle olive oil and sprinkle salt, black pepper, and paprika over the sweet potato rounds. Toss to coat evenly.
- Preheat the oven to 425°F. Line a baking sheet with parchment paper and spread the sweet potato rounds in a single layer. Roast for 20-25 minutes, flipping halfway through.
- Remove from the oven, drizzle with honey, and sprinkle with crumbled feta cheese and parsley before serving.
