  • 3 cups cooked rotisserie chicken, shredded
  • 10.5 oz can cream of chicken soup
  • 1 cup chicken broth
  • 6 oz package stuffing mix
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Shred the cooked rotisserie chicken into bite-sized pieces and place in a large mixing bowl.
  3. Add cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper to the chicken and mix until well combined. Stir in frozen mixed vegetables and half of the shredded cheddar cheese.
  4. Prepare the stuffing mix according to package instructions, then gently fold it into the chicken mixture.
  5. Spread the chicken mixture evenly in a greased 9x13 inch baking dish, layer the prepared stuffing on top, and sprinkle the remaining cheddar cheese over the stuffing.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
  7. Let cool for 5 minutes before serving.
