Sausage and Sweet Potatoes
  • 2 large sweet potatoes peeled and diced into 1-inch cubes
  • 1 pound smoked sausage sliced into 1/2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

  1. Prep the sweet potatoes and sausage by peeling and dicing the sweet potatoes and slicing the sausage.
  2. In a large skillet, heat olive oil over medium heat and cook the sausage for 5-7 minutes until golden and crispy.
  3. Combine sweet potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper in a large bowl. Toss to coat and spread on a baking sheet. Bake at 400°F for 25-30 minutes, stirring halfway through.
  4. Prepare the honey garlic sauce by combining honey, soy sauce, minced garlic, and apple cider vinegar in a small saucepan. Heat over medium heat for about 5 minutes until thickened.
  5. Combine roasted sweet potatoes and cooked sausage in a large bowl, drizzle with honey garlic sauce, and toss to combine. Serve hot garnished with parsley.
