Sausage
  • 1 pound Sausage of your choice (Italian, chicken, turkey, or plant-based)
  • 1-2 pieces Bell Peppers, sliced any color you like
  • 1 medium Zucchini, sliced into half-moons
  • 1 medium Onion, chopped yellow or red for sweetness
  • 2-3 cloves Garlic, minced for added flavor
  • 2 tablespoons Olive Oil for cooking
  • Seasonings (Salt, pepper, and your favorite herbs) like Italian seasoning or paprika
  • Optional Vegetables (Carrots, broccoli, or spinach) for extra nutrition

Method
 

  1. Wash and chop your vegetables. Slice the bell peppers and zucchini into bite-sized pieces. Chop the onion and mince the garlic.
  2. Heat the olive oil in a large skillet over medium heat. Add the sausage and cook for about 5-7 minutes, stirring occasionally until browned and cooked through.
  3. Add the onions and garlic to the skillet and cook for about 2 minutes until fragrant. Then, toss in the bell peppers and zucchini. Stir and cook for another 5-7 minutes until the veggies are tender but still crisp.
  4. Season with salt, pepper, and your favorite herbs. Stir well to ensure everything is evenly coated with flavor.
  5. Let the skillet cook for an additional 2-3 minutes to meld the flavors together. Remove from heat and serve.
