Add chopped onion and bell pepper to the skillet. Sauté for 3 to 4 minutes until softened. Add minced garlic and cook for an additional minute. Then, add fresh spinach and stir until wilted, about 1 to 2 minutes.
Combine the turkey and vegetable mixture, stirring to meld flavors. Adjust seasoning if needed.
Spoon the mixture into bowls. If using eggs, fry or scramble them separately and place on top. Garnish with fresh herbs and drizzle with hot sauce if desired.
