- Preheat your oven to 375°F (190°C). Rinse and pat dry the chicken breasts, then slice them in half horizontally.
- Prepare the jalapeños by slicing them in half lengthwise, removing seeds for milder flavor if desired, then chop them into small pieces.
- In a large mixing bowl, combine softened cream cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth, then fold in chopped jalapeños.
- In a baking dish, drizzle 1 tablespoon of olive oil. Spread the jalapeño cream cheese mixture on top of each chicken breast and place them in the dish.
- Sprinkle shredded cheese over the chicken, drizzle with remaining olive oil, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until chicken is cooked through and cheese is bubbly.
- Let the dish cool for a few minutes before serving.
