  • 1 lb boneless, skinless chicken thighs or breasts for tenderness
  • 3 tbsp gochujang Korean chili paste for spice
  • 2 tbsp soy sauce for savory depth
  • 3 cloves garlic freshly minced
  • 1 tbsp ginger grated
  • 2 tbsp sesame oil for nutty flavor
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) for color and crunch
  • 2 stalks green onions chopped

Method
 

  1. Marinate the chicken with gochujang, soy sauce, minced garlic, and grated ginger for at least 30 minutes.
  2. Prepare the vegetables by washing and chopping them into bite-sized pieces.
  3. Heat a skillet or wok over medium-high heat, add sesame oil, and cook the marinated chicken for 5-7 minutes until cooked through.
  4. Add the white parts of the green onions and prepared vegetables to the skillet and stir-fry for 3-5 minutes.
  5. Combine the cooked chicken with the vegetables, mixing well, and adjust seasoning if desired.
  6. Garnish with the green parts of the green onions and serve hot over rice or noodles.
