Chicken
  • 4 pieces boneless, skinless chicken breasts about 1.5 pounds
  • 1 cup fresh spinach chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Slice each chicken breast horizontally to create a pocket.
  3. In a mixing bowl, combine spinach, feta, cream cheese, Parmesan, garlic, oregano, salt, and pepper.
  4. Stuff the chicken breasts with the spinach and feta mixture.
  5. Sear the stuffed chicken in olive oil for 3-4 minutes on each side, then drizzle with lemon juice and bake for 25-30 minutes.
  6. Let the chicken rest for 5 minutes before serving.
