Chicken
  • 4 pieces boneless, skinless chicken breasts about 1.5 pounds
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Slice each chicken breast horizontally to create a pocket.
  3. Combine spinach, feta, cream cheese, Parmesan, garlic, oregano, salt, pepper, and red pepper flakes in a bowl.
  4. Stuff the chicken breasts with the filling and secure if necessary.
  5. Sear the stuffed chicken in olive oil for 3-4 minutes on each side until golden brown.
  6. Transfer to the oven and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 5 minutes before serving.
