Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs or breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
For the Sauce
  • 1/4 cup soy sauce
  • 1/4 cup honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch mixed with water (for thickening)
  • 1 teaspoon sesame oil (optional)
For the Bowl
  • 2 cups cooked rice or quinoa
  • 1 cup mixed vegetables (like bell peppers, broccoli, and carrots)
  • 1/4 cup chopped green onions
  • Sesame seeds for garnish (optional)

Method
 

  1. Marinate the chicken by combining soy sauce, honey or maple syrup, rice vinegar, garlic powder, ginger powder, salt, and pepper. Let it marinate for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium-high heat for about 5-7 minutes on each side until golden brown and cooked through.
  3. Prepare the sauce by adding the remaining marinade to the skillet, bringing it to a gentle boil, and thickening it with a cornstarch slurry.
  4. Assemble the bowl with cooked rice or quinoa, sliced chicken, mixed vegetables, and drizzle with sauce. Garnish with green onions and sesame seeds.
