  • 1 cup uncooked rice White or brown rice works well.
  • 1 pound ground beef or turkey Choose your favorite protein.
  • 1 packet taco seasoning This adds that classic taco flavor.
  • 1 cup black beans Canned or cooked, for added protein and fiber.
  • 1 cup corn Fresh, frozen, or canned for sweetness and crunch.
  • 1 cup diced tomatoes Fresh or canned, for a juicy touch.
  • 1 cup shredded lettuce For a fresh, crisp texture.
  • 1 cup shredded cheese Cheddar or Mexican blend for creaminess.
  • 1 unit avocado Sliced or diced, for a creamy addition.
  • 1 unit sour cream or Greek yogurt Optional, for a tangy finish.
  • 1 unit fresh cilantro Chopped, for garnish and flavor.
  • 1 unit lime wedges For a zesty squeeze on top.

Method
 

  1. Rinse 1 cup of uncooked rice under cold water. Combine the rinsed rice with 2 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low and cover. Let simmer for 15-20 minutes until water is absorbed. Fluff with a fork.
  2. In a large skillet, heat a tablespoon of oil over medium heat. Add 1 pound of ground beef or turkey and cook until browned, about 5-7 minutes. Drain excess fat, add taco seasoning and a splash of water, stir, and let simmer for 5 minutes.
  3. Assemble the Taco Rice Bowl by placing cooked rice at the bottom, followed by seasoned taco meat, black beans, corn, and diced tomatoes. Top with shredded lettuce, cheese, avocado, sour cream or Greek yogurt, cilantro, and a squeeze of lime.
