  • 2 cups sweet potatoes peeled and diced
  • 1 pound ground turkey lean protein
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon paprika for smokiness
  • 1 teaspoon dried thyme for flavor
  • 1 teaspoon salt to enhance flavors
  • 0.5 teaspoon black pepper for heat
  • 1 cup chicken broth adds moisture
  • 1 cup spinach chopped
  • 0.5 cup shredded cheddar cheese for topping

Method
 

  1. Preheat your oven to 375°F.
  2. Peel and dice the sweet potatoes into small cubes.
  3. In a large skillet, cook the ground turkey over medium heat until browned, about 5-7.
  4. Add chopped onion and minced garlic to the skillet and cook until translucent, about 3-4.
  5. Stir in diced sweet potatoes, paprika, thyme, salt, and black pepper. Pour in chicken broth and simmer for 10-15 until sweet potatoes are tender. Stir in chopped spinach until wilted.
  6. Transfer the mixture to a greased 9x13 inch baking dish, sprinkle cheddar cheese on top, and bake for 20-25 until cheese is bubbly and golden.
