Preheat your oven to 375°F.
Peel and dice the sweet potatoes into small cubes.
In a large skillet, cook the ground turkey over medium heat until browned, about 5-7.
Add chopped onion and minced garlic to the skillet and cook until translucent, about 3-4.
Stir in diced sweet potatoes, paprika, thyme, salt, and black pepper. Pour in chicken broth and simmer for 10-15 until sweet potatoes are tender. Stir in chopped spinach until wilted.
Transfer the mixture to a greased 9x13 inch baking dish, sprinkle cheddar cheese on top, and bake for 20-25 until cheese is bubbly and golden.
