- Pat the chicken breasts dry and season with salt, black pepper, and Italian seasoning. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, sauté minced garlic for 30 seconds, then add halved cherry tomatoes and spinach. Cook for 2-3 minutes until spinach wilts and tomatoes soften.
- Pour in heavy cream, stir, and let simmer. Add grated Parmesan cheese and red pepper flakes. Return chicken to the skillet and let simmer for an additional 2-3 minutes.
- Garnish with fresh basil leaves and serve immediately.
