Ingredients
  

Vegetables and Chicken
  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with water 1 tablespoon water
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Method
 

  1. Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
  2. Chop the zucchinis, red bell pepper, and rinse the snap peas.
  3. Marinate the chicken in a mixture of soy sauce, sesame oil, and pepper for about 10 minutes.
  4. Heat vegetable oil in a skillet or wok and cook the marinated chicken until browned and cooked through.
  5. Stir-fry the vegetables until tender-crisp.
  6. Combine garlic, ginger, cooked chicken, sauces, and cornstarch mixture, and cook until the sauce thickens.
